It's Saturday morning and we just got up from the breakfast table. The boys have left with their dad to go do chores and before I start the dishes, I want to share this recipe with you. I love breakfast and I love sausage. But for some reason, after I eat pork sausage, I get puffy. My fingers look like little Jimmy Deans, and my joints make me feel like I'm a close relative to the Tin Man in the Wizard of Oz. You see, the Tin Man could have limbered up if he just would have changed his diet. He was full of inflammation.

That's it! We could remake the Wizard of Oz with each character having a health problem, The Scarecrow has heart disease, the Tin Man has arthritis, the Lion is addicted to opioids, the Wizard is big Pharma, and Dorothy is the mother who is just trying to figure her way through this whole nutritional journey. I think I'm on to something...

And what Dorthy discovered in the end was right...

"There's no place like home."

Home is where you can learn, experiment, and discover new ways to improve your family's health. Food can heal. Meals cooked at home are cheaper, taste better and are healthier for you.

Meal time is an experience.

But my experience with sausage needed to change. It suddenly dawned on me that with all the beef in our freezer, why not make my own breakfast sausage at home? There's no magic in store bought sausage. It's ground pork or ground chicken. Our beef is grass-fed. It is high in Omega 3 which means it is anti-inflammatory. There are a lot of homemade sausage recipes on the web and this recipe is a combination of a few that I found. We like our sausages hot and full of flavor. If you have time, I would put the seasoned beef in the refrigerator for a few hours to blend the spices. When ready, mold patties and cook em up! Right now our beef is extra lean so I add coconut oil, or beef tallow in my mix. Try experimenting with your own set of spices that suite your fancy and have fun!

After proofing this blog with my family, it came to my knowledge that they have never seen the Wizard Of Oz! So guess what we're doing later? You guessed it; watching the movie while snacking on breakfast sausage.

1 LB grass-fed ground beef

1 tsp. sea salt

1 tsp. dried onion

1 tsp. minced garlic

1/2 tsp. red pepper flakes

1/2 tsp. paprika

1/2 tsp. fennel

1/2 tsp. coarse ground pepper

1/2 tsp coriander

1/2 dried parsley

Mix all ingredients together and let marinate in refrigerator for a few hours or even overnight... or not at all if you don't have time. If beef is extra lean, add tallow or refined coconut oil..
